I've been looking at full door cat screens, kind of like heavy duty plastic gates/doors that will work to keep animals out of the kitchen. Our dogs like to lay in the middle of the floor while I'm trying to cook. Ain't no kitchen big enough for that! They can go outside at least, not the little brats though.
My Great Pyrenees mix lays right under the food preparation in case there is something to catch. She's about as big as I am so I am with you there. I make sourdough every other week and she likes to lick the flour that gets on the floor (because she lays in front of the baking corner). But no cats here due to allergies. The animals like to be where the food is. Just like the other humans in the house!
My mother had a feral colony she was feeding, and allowing in and out of the house. (Yes, fleas were a problem.) Some of them were mostly housebroke and would do the "kitchen dance" at feeding time, some would try to grab food before I put it down so out came the spray bottle. Sort of worked, sort of didn't, like your cat, Shay. Some of them liked it, worse yet. Two years of feral misery for me trying to keep them from taking over the house, and Mother's "kitten napping" habit. The less said about that the better, I still have three of them right now.

Blitzen is the Kitchen Cat. The water squirt bottle does not faze him.
